Chick-fil-A will test its first plant-based entree: a cauliflower sandwich.

The new sandwich is similar to its famous chicken sandwich, but uses breaded and pressure-cooked cauliflower in place of meat.

Starting Monday, the privately owned chain, which is the third largest in the US by sales, will test menu items in Denver; Charleston, South Carolina; and the Greensboro-Triad area of ​​North Carolina.

Buffalo wild wings and countless times serve fried cauliflower in buffalo sauce as a substitute for chicken wings. Cauliflower has also turned out in pretzel form and – when finely chopped – as a substitute for rice.
