* Besan – cup
*Pure Ghee – 2½ cups
,Sugar – 4 cups

method

* Sieve the gram flour twice by breaking the knot. Preheat pure ghee and keep it for heating. Grease a tray.
*cook Sugar With half a liter of water over medium heat, stirring constantly, until dissolved. Increase the heat and bring the syrup to a boil.
* Cook without stirring for about five minutes or until the consistency of a thread.
* Add half a cup of hot pure ghee to the syrup and mix, stirring the gram flour slowly so that no lumps are formed.
*Keep stirring continuously till the mixture starts to bubble. Add hot ghee, half a cup at a time. Every time you add ghee it should crackle and froth.
*Continue this process till all the ghee is gone and you get a sweet and roasted Gram Flour Fragrance. Put it on a greased tray.
* Cool down a bit and cut into desired shapes.

Mysore Masala Dosa

*Dosa batter – 3 cups
*Potato bhaji – 1 1/2 cups
*oil for frying
*red sauce
*dried red pepper – 5-6
*Garlic coarsely chopped – 7-8 cloves
*Ginger (thinly sliced) – 1 inch piece
*Roasted chana dal (porridge) – 1/2 cup
*salt to taste

method

* To make chutney, put red chili in a mixer. add garlic, ginger, roasted chana dal and salt. Add some water and lemon juice and grind till smooth. Transfer to a bowl.
* Heat a dosa tawa. Sprinkle some oil and sprinkle some water and wipe with a piece of cloth. Pour the batter with a ladle on the pan and spread it over the entire surface. Make sure that the dosa is not too thin.
* Sprinkle some oil all around and let it cook till the bottom part is cooked. Spread the chutney all around. Place a little batata bhaji in the center and fold the dosa in the shape of a half moon.
